Easy Chicken Ravioli with Peas and Bacon for #SundaySupper

There are a couple of recipes I keep in my back pocket for days where I'm tired, late, or just don't feel like cooking something complicated. Since school starts in a week and a half, those days will be upon us more often than not. This is a great quick meal I keep in my arsenal for hectic days where I have no other choice. It's simple, quick, delicious, and Peanut will eat it without even a hint of complaint. It's also great for leftovers.




Ingredients:
  • 1 lb package Pasta Prima chicken & mozzarella ravioli
  • 8 oz frozen peas
  • 1/2 large onion, chopped
  • 4 cloves garlic, chopped
  • 1 1/2 tsp olive oil
  • 4 slices bacon
  • Cooking spray
Tools:
  • Cookie sheet
  • Medium pot for boiling water
  • Large skillet
Procedure:
  • Heat your oven to 450. This is for the bacon. Yes, I bake my bacon. This way it comes out nice and crispy and makes less of a mess on my stove top. And I just find it easier. (Ironic after you discover what happens  four steps from now.) 
  • Bake the bacon on a cookie sheet sprayed with cooking spray for ten minutes, checking after five. (The checking is KEY.) 
  • Heat olive oil over medium heat in large skillet. Add chopped onion. Let that cook for 5 minutes, then add garlic. (You don't want to overcook the garlic.) When garlic starts to brown, add your peas. 
  • Fill your pot for the water to boil your ravioli. Make sure to salt the water like mom does. 
  • Remove bacon. If you don't, and you foolishly just shut off the oven thinking it'll keep warm in there, it will end up like this:
Turns out, I'm human
  • Now in my defense, while I was preparing this meal I was also grilling a whole bunch of chicken for a second meal to take on our vacation which we were leaving for the next day. So I left the bacon in the oven. And I buy good bacon. The expensive stuff. Real bacon with no nitrates. (People who are bigger food snobs than even I am - if you could imagine - turned me on to this.) After all, we don't eat a lot of bacon. So when we do, it might as well be the real thing with no garbage in it. 
  • There is NO defense for what happened next. I burned the bacon. AGAIN. Yes. Burned. The bacon. Again. In my frustration, I threw a volcanic hissy fit in front of my family that included me slamming a new package of bacon onto the floor in disgust of my incompetence. (Turns out, I'm very human.)
  • I composed myself. I salvaged what I could of the second batch of bacon. I patted the excess grease off with a paper towel 
  • The ravioli I buy only needs 3-4 minutes in the water. When it's done, I add it to the peas and onions to make them a little crispy. If you want to make it juicier , you can add a little chicken stock. Or if you're feeling good about your workout that day, you can add the bacon grease for some flavor. Yes, you just read that correctly. I don't indulge myself often but when I do, I do it with bacon grease. Or chocolate. Lots and lots of chocolate. 
  • Crumble your bacon on top for a nice crispy salt kick. Serve with shredded Pecorino Romano to taste.
Making it Peanut-friendly:
  • I buy the Pasta Prima chicken ravioli from Costco. And I buy four packages at a time. This gives me two months worth of this meal. 
  • Peanut LOVES this recipe. Asks for seconds, cleans her bowl, and takes it for lunch the next day. Loves. But not the onions. 
  • I know it's difficult to prepare a delicious, healthy (somewhat) meal in a hurry. This one takes a half an hour. Tops. Enjoy!

  4. Oh god, I'm so glad that I'm not the only one that's a human food blogger! haha. I'm so sorry about the burnt bacon, but I feel your pain. Looks great thought.... the dish... not the burnt bacon :)

  10. Kids love ravioli and this looks like a nice healthy variation. Quick & Easy too which I really like. Did not know you could bake bacon. Hmm... will give it a try. I'll prolly burn it too but maybe third time's the charm :) Nice dish !!

  11. Too funny. My niece bakes her bacon, and it's always so perfect. Me, I like to pan fry it, but I reserve my mishaps for holidays. And rest assured, if it's a holiday and I'm frying bacon, I'll emerge from the kitchen with a burn or two and a pack of ice. By the way, the recipe sounds really tasty!

  12. I always keep a couple of packages of ravioli in the freezer for an easy meal idea during the week. And the funny thing is I did a similar thing last week. In the UK our bacon doesn't have a lot of fat on it, we use a different part of the pig for our bacon, so it didn't burn like this but it dried out and lost most of its flavour. Oh well, we are all human. And having kids tends to help turn our brains to mush.

  13. I do that all the time. Leave something in the oven to keep it warm and end up burning it. We all make mistakes. Your littel peanut is so cute and your recipe sounds right up my alley.

  17. Sorry for the loss of your good bacon! I cook my bacon in the oven also, but on a broiler pan so it's not swimming in grease (not that that's a bad thing...).

    Raviolis have saved me at dinner time and I never thought to add a little bacon goodness. Thanks for sharing!

    1. I save the grease for more sinister recipes at a later date. It's in a tupperware in my "oils and vinegars" cabinet.

      The bacon makes it tasty and crispy. Yum!
